The house is named for a grandmother in Damascus. Thyme is still rubbed with sesame and oil. Lamb waits until it is right for kibbeh nayyeh. Knafeh is Nabulsiyeh, not a gesture. The room is stone, brass, and wine — a Levantine table in Umm Suqeim.
